THE LAST ONES (Ω)
To make a Last One appear, Lightning must eliminate every spawn of every single enemy. Once the final enemy of any species is slain, a pink-colored version (called the "Omega" version) of that enemy will pop-up for one last battle. When engaging in a battle with it, it'll have 2-3 times the HP and Magic stats than its normal counterpart. Once the Last One is slain, that enemy is considered EXTINCT and it will no longer appear in the game in any way shape or form (until a New Game+).

Defeating Last Ones also gain you special abilities such as Level 4 Magic or Strength plus a special Accessory/Weapon that can only be obtained after the battle. And in some cases, if you eliminate a Last One midway thru the game (instead of waiting for the Ultimate Lair), any areas that they would've appeared in for later levels will be empty!
Another way to make Last Ones appear is to unlock the Extra Day. When unlocked, a special "Ultimate Lair" is opened at the Dead Dunes and Lightning can go there to challenge 28 of the 31 available Omega enemies.
The main reason to eliminate all the Omega versions is so that Lightning can complete a Side Quest at the Dead Dunes called Last One Standing for a man named Zanford. When you partake in that side quest for him, you are tasked with eliminating all 31 Last Ones including the Omega versions of enemies found on the Final Day. After you've defeated all 31 of these baddies, you can return to Zanford on a New Game+ to claim your prize from him.

Gremlins are plentiful in the Yusnaan area and since they tend to battle in large groups of 5-6, it shouldn't take too long to spawn the Omega version.

The faster way to spawn the Niblet Ω is to complete the Death Safari and Death Game side quests. Completing those quests should cut the 120 kills in half or so. Enter the Warehouse District after the Death Game quest to continue spawning more Niblets (plus two other enemies) until that pesky Last One shows up.

The best place to spawn the Zaltys is inside Yusnaan Palace. Just before you reach the floor where Snow is shackled up is a darkened room where you'll encounter either Zaltys or a Cyclops. Once you defeat the Zaltys or Cyclops, keep running in and out of the room to respawn either enemy.

This overgrown cat can spawn non-stop at the Pilgrim's Causeway in Luxerion, although you can only battle one cat per encounter. Just keep running laps from one to the other at the Pilgrim's Causeway and up to EIGHT of these cats will spawn in one lap, one after another. It's a better alternative than looking for them at the Dead Dunes.

The game demands that you slay 100 of these giant slugs. Luckily, these slugs fight in large packs, so there can be up to 8-10 of them in a single battle. With a strong Magic attack, you can defeat them easily and garner up 100 kills fairly quickly before you know it.

The Aster Protoflorian is exclusive to Rocky Crag (and some of Jagd Village) so finding them won't be difficult. Just be sure to pack some hardcore Magic to stagger this thing.

Getting this overgrown floating flower to spawn takes a lot of patience. It seems that the cycle for it to spawn is to slay 5-6 enemies in the Wildlands and the Triffid will pop up for a few spawns and then disappear for another cycle.

The Earth Eater is more prone to spawning in areas of the Dead Dunes that aren't filled with sand. In this case, run up towards the Dry Floodlands and Atomos's Sands to get it to spawn en masse.

Miniflans are plentiful in the Wildlands but also easy to ignore. Do not avoid these blue wonders! Every encounter has up to 10 flans in one battle, meaning 10 encounters will equal 100 kills, making the Last One appear in no time.

The Hanuman and Vali enemies both count as the same species. That means that even if you slay more of the smaller Vali and few of the larger Hanuman (or vice versa), each kill will still count towards spawning the Omega version. Just note that there is no Omega version of the Vali. These guys are easily found pestering the citizens of the Wildlands, so they won't be too difficult to find.

The Cactuar is an annoying little prick that can be difficult to chase after especially since it loves to just run off into the distance. The best place to spawn these prickly things is to navigate towards the Oasis Lighthouse at the Dead Dunes (assuming that you completed the Main Quest for Sazh, that is). Since the lighthouse has a narrow path, the Cactuar will spawn there but will end up hitting the wall as it tries to run away, allowing for you to smack it.

These useless robots only spawn in the Industrial Area of Yusnaan but not as frequently than the Desmond and Desdaemona enemies (which don't have Omega versions). You'll need to make it to the top of the Industrial Area and then run laps back and forth in order to make the robot spawn.

The dancing bird doesn't spawn as frequently at the Yusnaan Palace but it is the only place to find them. Make your way to the Banquet Room with the crystallized chandelier and run laps around the area to make these dancing birds spawn. If the Anubys shows up, run out of the area and then come back and run laps again. It's not a fun process, if that's what you were asking.

These silly sahagin fish are annoying during the daytime, so it's best to try and fight them in the evenings when they aren't swimming in the sand (they'll trot around on foot). The best place to make these fish spawn is at the Dead Dunes highway (same place as the Gurangatch).

It's most likely that you will NEVER be able to spawn the Omega version of this enemy due to unholy amount of kills needed for it. Your best bet to encountering this pesky mosquito is to find it on the 16th floor of the Ultimate Lair.

The Arcangeli is probably the enemy that spawns more frequently at the God's Sanctum. With that in mind, use Fang when she enters your party to help eliminate them. Just note that the Omega version appears AFTER you enter God's Sanctum and begin one of the four trials.

Killing 60 Skeletons is the main requirement for the Skeletons In The Closet side quest for Jamus @ the Ruffian. Since they spawn only inside the temple ruins, you'll have to run around the entire area to make them show up. It's a bit of a pain since you'll probably find more Gremlins, Goblots, and Schrodingers in the ruins, especially.

Goblots can be found more frequently in the temple ruins at the Dead Dunes. While they don't battle in large groups as the Niblets, the time it takes for another one to show up is much quicker.

GAME NOTE: YOU CAN'T KILL 'EM ALL!
Not every enemy has a Last One. Even if Lightning brought all 31 Omegas to extinction, you'll still run into some bad guys that will spawn indefinitely (mostly).
Enemies with no Omega version:
- Anubys
- Set (found only on the Final Day)
- Flanitor
- Yusnaan Guards
- Gertrude
- Desmond
- Desdaemona
- Etro Fanatics
Also, there are some monsters that only appear once during the game without an Omega version. If you manage to slay that lone monster, they will be immediately extinct.
Enemies that only spawn once:
- Cactair
- Aeronite
- Ereshkigal
That's all 31 of those meddling Omega creatures! Be sure to return to Zanford on a New Game+ to claim the prize for the Last One Standing Side Quest. Also, if you defeat the Last Ones on Hard Mode, you'll receive Level 5 upgrades to Abilities and/or 1500 Gil.
